This recipe isn’t originally mine, mug cakes are all over the internet, as are IP Mug Cakes, but this one has a fat kid twist so I’m calling it mine :)
Chocolate Coconut Mug Cake
1 pkg IP Chocolate Drink*
1 egg white
1 tsp baking powder
1 tbsp coconut oil (liquid)
1 tsp splenda
Splash of coconut extract
-Put the drink mix in a big mug*
Add enough water to bring it to a slightly watery pudding consistency, just enough to be able to mix easily (approx 1/4 cup to 5 tbsp)
-Add the other ingredients (egg white, baking powder, coconut oil, splenda, coconut extract )
-Whisk until it’s silky smooth
-Put it in the microwave for 2.5 to 3 minutes ON TOP OF A BIG PLATE because it will inflate like crazy, but then deflate again and may run over the edge.
- alternately you can use a pyrex loaf pan and the batter will only inflate about half way up the loaf pan and you don’t have to worry about it running over the edge but then it’s technically not a mug cake but rather a loaf…your call :)
- let cool and enjoy.
*this must be the powdered version of the Ideal Protein Drink – you can also use the vanilla or cappuccino drink mix.
This cake is moist and delicious, it really hits the spot when you want something non-restricted but don’t want to feel like you’ve been deprived of an evening treat!
