Asian Lettuce Cups and assorted Fat Kid thoughts.



Ingredients:

5 oz lightly seasoned, cooked ground beef*
1/4 c zucchini, finely diced
1/4 c green pepper, finely diced
1/4 c green onion, finely diced
3/4 c bok choy, finely diced
1/2 c tomato, chopped
2 Tbsp Teriyaki Sauce (I use homemade but I’m sure any would do)
Chicken Stock
chili pepper for heat – if desired
Butter lettuce or romaine lettuce leaves

Directions:

*I keep lightly seasoned, pre-portioned ground beef in the freezer for quick dinners. If you do not have ground beef pre-cooked, then cook the ground beef up first

- lightly saute the zucchini, green peppers and half the green onion in some grape seed oil and chicken stock until softened
-add in bok choy, cook until softenend
- add in ground beef to warm through using some chicken broth to make sure the mixture doesn’t dry out
- add in approx 2 tbsp of the teriyaki sauce & chili pepper if you want some heat

Serve in lettuce cups topped with tomato & reserved green onion

Other Fat Kid Thoughts:

♥ I was feeling kind of down this week because I’d had this great loss on Sunday and then boom, on Monday morning I was up 3 lbs. Who knows why, obviously the scale gods were punishing me for scale hopping. In typical fat kid style I got all upset and decided I should eat my way out of my funk…but skinny Jordanna was there and she was all “don’t make it worse by spiraling out of control, where has eating ever gotten you?”. Sigh, skinny Jordanna is right…the only thing food ever did was make me fat, so long story short I didn’t eat my way through the frustration and by Wednesday the extra 3 lbs had disappeared.

♥ My coach is having a contest this week, any of her clients who lose 4 lbs or more get a free box of food and at $27 a box I really want to be the recipient of one. After losing 5.7 lbs last week though I’m not sure that will be possible.

♥ I am 0.3 BMI Index points away from not being morbidly obese

♥ I am only 3 lbs away from my new higher birthday goal!

♥ Speaking of my birthday, I had myself convinced to go off program and enjoy a delicious Red Robin Guacamole Bacon burger with unlimited steak fries as a birthday treat but for some reason I’ve decided that I don’t want to anymore, instead I’m going to make myself a cauliflower crusted pizza, or taco lettuce cups as a treat….hmmm could this fat kid really be changing her mind set on food? I mean don’t get me wrong, I still love food and think about recipes and cooking all the time but maybe, just maybe my ideology on food is changing!

    Your doing great Jordanna!~! It's funny how instead of a greasy burger you would rather have cauliflower or lettuce cups for your bday dinner!?!? It's great that your cravings are changing and great that you have the strength to beat the 'fat kid'! :)
